POPUP KITCHEN AT POLARHAGEN

Polarhagen is a vegan and organic farm in Lofoten. It is run by the couple Parsa and Lisa. They hope to inspire others to eat more ethical, locally produced food and become more environmentally conscious. That’s why they arrange a pop-up kitchen. Thursday was this season's first one, and Ingunn participated to taste Parsa’s famous pizza!


Polarhagen grows vegetables for the local community without a tractor. Their focus is to make the soil as rich as possible to make amazing vegetables that give clean and tasty food. 

Six months ago Parsa and Lisa bought a farm close to Hauklandstranda. Before this farm was used to produce milk. In the construction of the organic farm they reuse materials from the old farm. The stalls for the cows are now compost bins. They want to show other farmers how to convert a farm with livestock to one where it’s only grown herbs, vegetables, fruit and berries.

The pop-up kitchen event is spent outside by a long table that Parsa has built himself. It’s under a roof of reused corrugated tin. Right next to this is where they grow vegetables and herbs. When cooking, Parsa picks the topping for the pizza’s here. We have never tasted so good kale before! 

When we arrived we were served a delicious, organic welcome drink of rhubarb and apple. Then Parsa introduced himself and Lisa and told us what they work with at Polarhagen. At one end of the table, Parsa made the pizza’s while talking to the guests. 

During the evening it was served six different pizzas: 1) Marinara, 2) Marinara Fresca, 3) Mushroom and rhubarb, 4) Raspberry, 5) Beyond and 6) Victory. All of course vegan! Instead of cheese he used nutritional yeast. It’s some of the best pizza we have ever tasted. The flavor combinations were original and unlike anything we have ever tasted before.

To top the evening off we were served an amazing marzipan dessert made of chocolate with burnt rhubarb jam. It was served with self-picked flowers. Ingunn doesn't really like marzipan but this dessert she thought was amazing! To drink we got delicious lavender tea from the farm. 

The event lasts from 6 pm to 10 pm. It was obvious that the couple wanted to give their guest an unique experience. We had many good conversations with new acquaintances. If you want a whole night with as much pizza as you can eat, we definitely recommend the pop up kitchen at Polarhagen! Read more about the event here.
