PROTEIN RICH COCONUT STEW

Our new favorite stew! This protein rich coconut stew is packed with flavor, easy to make and nutrisious.


Ingredients

2 carrots

1 onion

2 cloves of garlic

1 tin of chickpeas

1 tin black beans

1 tin lentils

75 g kale

125 g mushroom

5 dl coconut milk

2-3 tbs vegetable broth (we use from Helios)

1 tbsp soy sauce

Salt and pepper

Approach

Grate the carrots, onion and mushroom in oil for a few minutes. Rinse chickpeas, lentils and black beans in water and add it in the boiler. Add coconut milk and let it boile until the stew thickens to desired consistency. Add the vegetable broth and soy sauce. Finally you add the kale and let it soak for a few minutes. Season with salt and pepper! On the side, you can serve nan bread and rice.
